The only thing you can’t change is battle class. You have hundreds of options in every category and can change literally everything else at anytime other than battle class which is not that big of a deal. You never could change a Skylanders class or appearance so I don’t see why everyone is freaking out. Most games don’t let you change class either or even appearances for that matter but you can change ALL aspects of your appearance and gear which allows you to make infinite characters with one crystal throughout its life.
